Authentic Desi Rotis with Sehori Atta
There's nothing quite like the warmth and simple deliciousness of a freshly made roti. Using Dinesh Flour Mills Premium MP Sehori Atta ensures a truly traditional taste and high fiber goodness. Here's how to make perfect, soft desi rotis at home.

Ingredients:

1 cup Dinesh Flour Mills Premium MP Sehori Atta

½ - ¾ tsp Salt (optional, adjust to taste)

Approx. ½ cup Warm Water (you may need a little more or less)

1 tsp Ghee or Oil (for dough, optional)

Extra Dry Atta (for dusting)

Ghee (for brushing rotis, optional)
Method:

Combine Ingredients: In a large mixing bowl, combine the Sehori Atta and salt.

Knead the Dough: Gradually add the warm water, a little at a time, mixing with your hands. Knead the mixture into a soft, smooth dough. It should be pliable but not sticky. If using, add the ghee/oil and knead for another minute until fully incorporated.

Rest the Dough: Cover the dough with a damp cloth and let it rest for at least 15-20 minutes. This helps the gluten relax and makes the rotis softer.

Divide the Dough: Divide the dough into 8-10 equal portions and roll them into smooth balls.

Roll the Rotis: Take one dough ball, flatten it slightly, and dip it in dry atta on both sides. On a clean, flat surface (like a rolling board), use a rolling pin to roll it into a thin, even circle, about 6-7 inches in diameter. Use dry atta for dusting as needed to prevent sticking.

Heat the Tawa: Heat a tawa (flat griddle or cast-iron pan) over medium-high heat.

Cook the Roti: Place the rolled roti on the hot tawa. After about 30-45 seconds, when you see small bubbles appearing on the surface, flip it.

Puff the Roti: Cook on the second side for another 30-45 seconds. For a puffed roti, you can either:

Directly place the roti over an open flame (using tongs) for a few seconds until it puffs up, then flip and cook the other side similarly.

Press gently around the edges with a clean cloth or spatula until it begins to puff.

Finish and Serve: Once the roti is cooked through and lightly golden brown spots appear, remove it from the tawa. Brush with a little ghee (if desired).
