Ingredients:
- 1 cup Dinesh Flour Mills Foxtail Millet (unpolished, raw)
- 2 cups vegetable broth or water
- 2 tablespoons olive oil
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 1 teaspoon cumin seeds
- ½ cup mixed colorful bell peppers, diced
- ¼ cup carrots, finely diced
- ¼ cup green peas (fresh or frozen)
- Zest and juice of 1 lemon
- 3 tablespoons fresh herbs (mixture of parsley, mint, and cilantro), chopped
- Salt and pepper to taste
- ¼ cup toasted nuts (almonds or cashews), chopped (optional)
Instructions:
- Rinse the foxtail millet thoroughly under cold water until water runs clear.
- Heat olive oil in a medium saucepan over medium heat.
- Add cumin seeds and let them splutter for a few seconds.
- Add onions and sauté until translucent (about 3 minutes).
- Add garlic and sauté for another 30 seconds until fragrant.
- Add diced bell peppers and carrots, sauté for 2 minutes.
- Add the rinsed foxtail millet and stir for 1-2 minutes to toast slightly.
- Pour in vegetable broth or water, add salt and pepper to taste.
- Bring to a boil, then reduce heat to low, cover, and simmer for about 15-18 minutes until the liquid is absorbed and millet is tender.
- Remove from heat and let it stand covered for 5 minutes.
- Fluff with a fork and gently fold in green peas, lemon zest, lemon juice, and fresh herbs.
- Top with toasted nuts if using and serve warm.
