Recipe: Foxtail Millet Lemon Herb Pilaf

Ingredients:
1 cup Dinesh Flour Mills Foxtail Millet (unpolished, raw)
2 cups vegetable broth or water
2 tablespoons olive oil
1 small onion, finely diced
2 cloves garlic, minced
1 teaspoon cumin seeds
½ cup mixed colorful bell peppers, diced
¼ cup carrots, finely diced
¼ cup green peas (fresh or frozen)
Zest and juice of 1 lemon
3 tablespoons fresh herbs (mixture of parsley, mint, and cilantro), chopped
Salt and pepper to taste
¼ cup toasted nuts (almonds or cashews), chopped (optional)
Instructions:
Rinse the foxtail millet thoroughly under cold water until water runs clear.
Heat olive oil in a medium saucepan over medium heat.
Add cumin seeds and let them splutter for a few seconds.
Add onions and sauté until translucent (about 3 minutes).
Add garlic and sauté for another 30 seconds until fragrant.
Add diced bell peppers and carrots, sauté for 2 minutes.
Add the rinsed foxtail millet and stir for 1-2 minutes to toast slightly.
Pour in vegetable broth or water, add salt and pepper to taste.
Bring to a boil, then reduce heat to low, cover, and simmer for about 15-18 minutes until the liquid is absorbed and millet is tender.
