Foxtail Millet Lemon Herb Pilaf

Recipe: Foxtail Millet Lemon Herb Pilaf Prep Time: 10 minutesCook Time: 25 minutesServings: 4 Ingredients: 1 cup Dinesh Flour Mills Foxtail Millet (unpolished, raw) 2 cups vegetable broth or water 2 tablespoons olive oil 1 small onion, finely diced 2 cloves garlic, minced 1 teaspoon cumin seeds ½ cup mixed colorful bell peppers, diced ¼ cup carrots, finely diced ¼ cup green peas (fresh or frozen) Zest and juice of 1 lemon 3 tablespoons fresh herbs (mixture of parsley, mint, and cilantro), chopped Salt and pepper to taste ¼ cup toasted nuts (almonds or cashews), chopped (optional) Instructions: Rinse the foxtail millet thoroughly under cold water until water runs clear. Heat olive oil in a medium saucepan over medium heat. Add cumin seeds and let them splutter for a few seconds. Add onions and sauté until translucent (about 3 minutes). Add garlic and sauté for another 30 seconds until fragrant. Add diced bell peppers and carrots, sauté for 2 minutes. Add the rinsed foxtail millet and stir for 1-2 minutes to toast slightly. Pour in vegetable broth or water, add salt and pepper to taste. Bring to a boil, then reduce heat to low, cover, and simmer for about 15-18 minutes until the liquid is absorbed and millet is tender. Remove from heat and let it stand covered for 5 minutes. Fluff with a fork and gently fold in green peas, lemon zest, lemon juice, and fresh herbs. Top with toasted nuts if using and serve warm. Multimillet Muffins

Ingredients: 1 cup of Dinesh Flour Mills Multi Millets Flour 1/2 cup whole wheat flour 1 teaspoon baking powder 1/2 teaspoon baking soda 1/4 teaspoon salt 1/2 cup sugar 1/4 cup oil or melted butter 1/2 cup yogurt or buttermilk 1 large egg 1 teaspoon vanilla extract 1/2 cup mix-ins (berries, chocolate chips, nuts, etc.) Instructions: Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners. In a large bowl, whisk together the multimillet flour, whole wheat flour, baking powder, baking soda, salt, and sugar. In another bowl, whisk together the oil or butter, yogurt or buttermilk, egg, and vanilla extract. Add the wet ingredients to the dry ingredients and stir until just combined. Fold in the mix-ins. Divide the batter evenly among the muffin cups. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Millets Poha

Recipe for Millet Poha using Dinesh Flour Mills Millets: Ingredients: 2 cups of Dinesh Flour Mills Barnyard Millet. 1 onion, finely chopped 1 green chili, finely chopped 1/2 cup of peas 1/2 cup of chopped carrots A handful of peanuts 1 tsp of mustard seeds A pinch of asafoetida (Hing) 8-10 curry leaves 1 tsp turmeric powder Salt to taste 1 tablespoon oil Lemon juice to taste Fresh coriander leaves for garnishing Steps: Roast the millets in pan till light brown without oil . Now add some 4 cups water and boil for 7-8 mins. Now strain the water and keep aside. Heat oil in a pan and add mustard seeds. When the seeds start to splutter, add asafoetida, curry leaves, and green chilies. Sauté for a few seconds. Add the peanuts and fry them until they are crispy. Add the chopped onions and sauté until they turn translucent. Now add peas and carrots, and cook until they are soft. Add turmeric powder and salt, mix well. Add the Dinesh Flour Mills Millets which were kept aside to the pan and mix well so that the Poha is coated with turmeric. Cover the pan and let it cook on a low flame for about 3-5 minutes.
