Ingredients:

For the Filling:

  • 2 Onions (Cut into Small Pieces)
  • 2 Tomatoes (Cut into Small Pieces)
  • 150 grams Paneer (Grated)
  • 1 cup Peas
  • 1 Carrot (Grated)
  • 3-4 Mushrooms (Cut into Small Pieces)

For the Potatoes:

  • 6 Big Size Potatoes

For Topping:

  • Grated Cheese

Spices:

  • Haldi (Turmeric)
  • Dhania (Coriander)
  • Saunf (Fennel Seeds)
  • Garam Masala
  • Salt
  • Kali Mirch (Black Pepper)

Method:

  1. Prepare the Potatoes:

    • Wash the big-sized potatoes thoroughly.
    • Using a paring knife, carefully scoop out the insides of the potatoes, leaving a thick shell. The scooped-out portion will be used for stuffing.
  2. Prepare the Filling:

    • Heat a pan with some oil.
    • Fry the chopped onions until they turn brown.
    • Add the chopped tomatoes, grated paneer, peas, chopped mushrooms, and grated carrots to the pan.
    • Stir the mixture and cook until the vegetables become tender and the flavors meld together. This should take about 10-15 minutes.
  3. Add Spices:

    • Season the vegetable and paneer mixture with the spices - Haldi (turmeric), Dhania (coriander), Saunf (fennel seeds), Garam Masala, salt, and Kali Mirch (black pepper). Adjust the quantity of spices according to your taste.
  4. Fill the Potatoes:

    • Take the scooped-out potatoes and stuff them with the prepared vegetable and paneer mixture. Ensure that you fill them generously.
  5. Top with Cheese:

    • Sprinkle a generous amount of grated cheese on top of each stuffed potato. The cheese will melt and form a delicious crust during baking.
  6. Bake:

    • Preheat your oven to a temperature of 350°F (175°C).
    • Place the stuffed potatoes on a baking tray or dish.
