Quinoa Upma Recipe

🌿Ingredients:

  • 1 cup Dinesh Flour Mills Quinoa

  • 2 cups water

  • 1 tbsp oil or ghee

  • 1 tsp mustard seeds

  • 1 tsp cumin seeds

  • 1 tbsp chana dal (optional)

  • 1 tbsp urad dal (optional)

  • 1 green chili (slit)

  • 1 inch ginger (grated)

  • 1 medium onion (chopped)

  • 1 carrot (finely chopped)

  • 1/4 cup green peas

  • 6-8 curry leaves

  • Salt to taste

  • Fresh coriander leaves (chopped) for garnish

  • Lemon juice (optional)


Instructions:

  1. Rinse and cook quinoa:

    • Wash 1 cup of Dinesh Flour Mills Quinoa thoroughly in water.

    • Boil 2 cups of water in a pan. Add the rinsed quinoa and a pinch of salt.

    • Cook on low heat for about 12–15 minutes until the quinoa becomes soft and fluffy. Keep it aside.

  2. Prepare tempering:

    • Heat oil or ghee in a pan. Add mustard seeds. When they splutter, add cumin seeds, chana dal, urad dal, and let them brown slightly.

  3. Add aromatics and vegetables:

    • Add green chili, grated ginger, and curry leaves.

    • Sauté onions until translucent.

    • Add chopped carrots and peas. Cook for 4–5 minutes until the veggies soften slightly.

  4. Combine quinoa and cook:

    • Add the cooked quinoa to the pan. Mix well with the sautéed veggies and spices.

    • Adjust salt and stir gently to combine everything evenly.

    • Cover and simmer for 2–3 minutes for flavors to meld.

  5. Finish and serve:

    • Garnish with fresh coriander and a dash of lemon juice if desired.

    • Serve hot for a nutritious breakfast or light dinner.
