Millet Tikki Recipe
Millets tikki is a healthy and popular Indian snack made from a millet flour or mixture of different millet flours, vegetables, and spices.
The mixture is shaped into small balls and then pressed with hands to make small patties then shallow fried in oil until its color becomes golden brown and crispy.
Recipe for Millet Tikki - Millet Cutlet :
1 cup mixed millets (such as foxtail, little, barnyard)
1 large potato, boiled and mashed
1 onion, finely chopped
1 green chili, finely chopped
1 tsp ginger paste
1/2 tsp cumin powder
1/2 tsp coriander powder
Salt to taste
Oil for frying
Rinse the millets and soak them in enough water for 4-5 hours or overnight. Drain the water and rinse again.
In a pressure cooker, add the soaked millets with 2 cups of water and pressure cook for 3 whistles. Let the pressure release naturally.
Once the millets have cooled down, transfer them to a mixing bowl, mash the soft millets, add mashed potatoes, chopped onions, green chili, ginger paste, cumin powder, coriander powder, and salt to taste.
Mix everything together until well combined. If the mixture is too dry, add a little water to make it moist.
Shape the mixture into small tikki or patties or cutlet.
Heat oil in a pan on medium heat. Once the oil is hot, carefully place the tikkis in the pan and fry until golden brown on both sides.
Serve hot with your favorite chutney or sauce.
