Millets Dosa

Millets Dosa Recipe  Healthy, Delicious, and Nutritious !! Perfect Start for Your Day How To Prepare Millets Dosa :  Millets dosa is a healthy and delicious breakfast or snack option that is easy to prepare. Here's a simple recipe for millets dosa: Ingredients: 1 cup mixed millets (such as foxtail, little, barnyard , etc) 1/2 cup urad dal (split black gram) 1/2 tsp fenugreek seeds Salt to taste Water as required Oil for cooking Instructions: Rinse the millets and urad dal separately, and soak them in enough water for 4-5 hours or overnight. Also, soak the fenugreek seeds along with the urad dal. Drain the water from both the millets and urad dal-fenugreek mixture, and rinse them again. In a blender, grind the millets to a smooth batter, adding water as required. Transfer the batter to a mixing bowl. Grind the urad dal and fenugreek seeds to a smooth and fluffy batter, adding water as required. Add this batter to the mixing bowl with the millet batter. Mix the two batters well, adding salt to taste. Cover the bowl and let the batter ferment for 6-8 hours or overnight. Heat a non-stick or cast-iron dosa tawa on medium heat. Once the tawa is hot, pour a ladleful of the batter on the center of the tawa and spread it in a circular motion to make a thin dosa. Drizzle a little oil around the edges of the dosa, and let it cook for 1-2 minutes or until the edges start to turn golden brown. Flip the dosa using a spatula and cook for another 1-2 minutes or until the other side is also golden brown. Serve hot with chutney or sambar. International Millets Year 2023 - IMY2023

International Millets Year 2023 - IMY 2023 Earlier in 2018, Millets were Rebranded in the name of Nutri Cereals, later the year 2018 was declared as the National Year of Millets !! The Food and Agriculture Organization (FAO) of the United Nations, organized a grand opening ceremony for the International Year of Millets – 2023 at Rome on 6th December 2022 As declared by the United Nations General Assembly : Year 2023 is The International Millets Year (IMY 2023), The objective of the International Millets Year is to raise awareness about the importance of millets as a healthy and nutritious food source and to promote their cultivation, consumption and utilization around the world. The celebration of IMY is expected to contribute to the achievement of the Sustainable Development Goals (SDGs) by improving food security, nutrition, and livelihoods of small farmers, particularly in developing countries. Various events, campaigns, and initiatives were organized by governments, organizations, and individuals around the world to mark the International Millets Year. These included conferences, seminars, workshops, cooking competitions, awareness campaigns, and exhibitions, among others. The International Millets Year serves as a platform to raise awareness about the potential of millets as a climate-resilient crop and a tool for food security and poverty alleviation. It also emphasizes the need for increased investment in research, development, and promotion of millets as a part of a sustainable food system. India has been at the forefront of promoting millets as a healthy and sustainable food source, and it played a significant role in the celebration of the International Millets Year in 2023. The Government of India declared the year 2023 as the National Year of Millets, in line with the International Millets Year. Embassies of India will be organizing events in 140 countries to promote millets.  Several initiatives were undertaken by the Government of India and other organizations to promote millets during the National Year of Millets. These included: Promotion of millet-based products: The government promoted the use of millets in various food products, including bakery products, breakfast cereals, and snacks. Awareness campaigns: Various awareness campaigns were launched to promote millets, including digital campaigns, radio and TV ads, and workshops. Millet festivals: Millet festivals were organized in various parts of the country to showcase the diversity of millets and their culinary uses. Millet cultivation: The government provided support to farmers for millet cultivation, including subsidies and training. Millet-based entrepreneurship: The government encouraged the establishment of millet-based enterprises, such as millet processing units and millet-based restaurants. Overall, the National Year of Millets in India was a great success, and it helped in raising awareness about the importance of millets for health, nutrition, and sustainability. It is expected that the promotion of millets will continue beyond the National Year of Millets, as part of the government's efforts to promote sustainable and healthy food systems. Millets Recipes - Millet Tikki Recipe Millets tikki is a healthy and popular Indian snack made from a millet flour or mixture of different millet flours, vegetables, and spices. The mixture is shaped into small balls and then pressed with hands to make small patties then shallow fried in oil until its color becomes golden brown and crispy. Recipe for Millet Tikki - Millet Cutlet : Ingredients:1 cup mixed millets (such as foxtail, little, barnyard)1 large potato, boiled and mashed1 onion, finely chopped1 green chili, finely chopped1 tsp ginger paste1/2 tsp cumin powder1/2 tsp coriander powderSalt to tasteOil for fryingInstructions:Rinse the millets and soak them in enough water for 4-5 hours or overnight. Drain the water and rinse again.In a pressure cooker, add the soaked millets with 2 cups of water and pressure cook for 3 whistles. Let the pressure release naturally.Once the millets have cooled down, transfer them to a mixing bowl, mash the soft millets, add mashed potatoes, chopped onions, green chili, ginger paste, cumin powder, coriander powder, and salt to taste.Mix everything together until well combined. If the mixture is too dry, add a little water to make it moist.Shape the mixture into small tikki or patties or cutlet.Heat oil in a pan on medium heat. Once the oil is hot, carefully place the tikkis in the pan and fry until golden brown on both sides.Serve hot with your favorite chutney or sauce.Enjoy your delicious and healthy millet tikki !!
