1 cup Dinesh Flour Mills White Chana (medium size)
2 medium onions (finely chopped)
2 tomatoes (pureed)
1 tbsp ginger-garlic paste
2 green chilies (slit)
Whole spices: 1 bay leaf, 2 cloves, 1 small cinnamon stick
1 tsp cumin seeds
1 tsp turmeric powder
1 tsp red chili powder
1.5 tsp coriander powder
1 tsp garam masala or chole masala
Salt to taste
Fresh coriander for garnish
Soak & Boil:
Soak 1 cup Dinesh White Chana overnight.
Pressure cook with 3 cups water and a pinch of salt for 5-6 whistles until soft.
Prepare Masala:
In a pan, heat 2 tbsp oil. Add cumin seeds, bay leaf, cloves, and cinnamon.
Add onions and sauté until golden brown.
Add ginger-garlic paste and green chilies. Sauté until raw smell disappears.
Cook Tomato Base:
Add tomato puree, turmeric, chili powder, and coriander powder.
Cook until oil separates.
Simmer Choley:
Add boiled chana to the masala. Add salt and 1 cup water.
Simmer for 15–20 minutes on low heat.
Add garam masala and mix well.
Garnish & Serve:
Garnish with fresh coriander and sliced onions.
Serve hot with bhature, rice, or roti.
