Annakut Family Thali Recipe for Govardhan Puja

by Pradeep Gupta on Oct 24, 2026

Bolo Govardhan Dhari Ki Jai!

Bring together kadhi chawal, puffed pooris, atta halwa and mixed sabzi for a Govardhan Puja family thali. This onion-free and garlic-free festive menu uses Dinesh Flour Mills rice, besan, atta and ghee.

A Govardhan Puja meal can bring several familiar dishes together on one thali. Here, kadhi chawal sits alongside fresh pooris, atta halwa and mixed vegetables. The menu is made without onion or garlic and can be adapted to the ingredients your family uses for the occasion.

This is a practical family thali rather than a full 56-dish Annakut spread. The easiest way to cook it is to begin with the kadhi, use its simmering time for the vegetables and halwa, and fry the pooris just before serving. That sequence keeps the final meal manageable.

How to make annakut family thali

Step 1

Start the kadhi: whisk curd, besan, water and turmeric until completely smooth. Heat ghee in a deep heavy pan; briefly sizzle cumin, fenugreek and optional dried chilli. Take off the heat briefly, pour in the whisked mixture and return to medium-low heat. Stir continuously until it reaches a gentle boil, then simmer for 35–45 minutes, stirring often. Add salt and a splash of water if needed.

Step 2

Cook the rice: rinse and soak for 20 minutes, then drain. Bring rice and measured water to a boil, cover and cook on low for 12–15 minutes. Turn off the heat and rest covered for 10 minutes.

Step 3

Prepare the sabzi: sizzle cumin in oil, add chopped vegetables, turmeric, coriander and salt. Add 3–4 tbsp water, cover and cook for 15–20 minutes, stirring occasionally, until all vegetables are tender.

Step 4

Make halwa: dissolve sugar in hot water. Roast atta in ghee on low for 12–18 minutes until aromatic. Gradually add the hot syrup with care, stir until smooth and thick, then add cardamom.

Step 5

Make pooris last: knead atta, oil, salt and water into a firm dough. Rest covered for 15 minutes. Divide into 16 small balls and roll evenly. Fry in hot oil in small batches until puffed and lightly golden on both sides. Drain.

Step 6

Arrange rice, kadhi, sabzi and halwa in separate sections or bowls. Add fresh pooris and serve together.

Tips for getting it right

  • Whisk the curd and besan completely smooth before heating to avoid flour lumps.

  • Use a deep pan for kadhi and stir until the first gentle boil.

  • This kadhi is made without pakoras. If adding pakoras, prepare them separately and allow extra time and ingredients.

  • Keep poori dough firm rather than soft. Even rolling helps the breads puff.

  • Cut vegetables to a similar size and cook potatoes and cauliflower until tender.

  • Use separate spoons and bowls to keep the rice, kadhi and halwa distinct on the thali.

Serving suggestions

Put kadhi, halwa and sabzi in small bowls, with rice and pooris alongside. Serve the pooris freshly fried. Finish the table with the line: Bolo Govardhan Dhari Ki Jai!

Storing and reheating

Store each cooked dish separately. Cool and refrigerate promptly at 4°C or below. Refrigerate rice quickly, preferably within one hour, and use within 24 hours. Use kadhi and sabzi within two days and halwa within three. Reheat once until steaming throughout.

Frequently asked questions

Is this a complete Annakut offering?

No. It is a suggested five-component family thali. Follow your family or temple practice for an offering.

Can I make it ahead?

You can prepare the kadhi, sabzi and halwa earlier the same day with suitable temperature control. Cook rice and fry pooris closer to serving for the best texture.

Can I change the vegetables?

Yes. Choose vegetables according to your household customs and adjust cooking time for each.

Why are my pooris not puffing?

Check that the dough is firm, the rolled discs are even and the oil is hot enough before frying.
