Khand Gajar Halwa (Carrot Pudding with Khand)
Ingredients:
- 1 kg carrots, peeled and grated
- 1 liter full-fat milk
- 150g ghee (clarified butter)
- 200g Dinesh Flour Mills Desi Khand (Khandsari sugar)
- 1/2 teaspoon cardamom powder
- A handful of mixed nuts (almonds, pistachios, cashews) - chopped
- A pinch of saffron strands (optional)
Instructions:
- Heat ghee in a heavy-bottomed pan or kadai.
- Add the grated carrots and sauté for 5-6 minutes on medium heat.
- Pour in the milk and bring to a gentle boil.
- Reduce heat and simmer, stirring occasionally, until the milk is absorbed and the carrots are cooked (approximately 40-45 minutes).
- Once the mixture thickens, add the Khand and mix well.
- Continue cooking for another 10-15 minutes until the halwa reaches a thick consistency.
- Add cardamom powder and saffron strands (if using).
- Garnish with chopped nuts before serving.
