Khand Gajar Halwa (Carrot Pudding with Khand)

Ingredients:

  • 1 kg carrots, peeled and grated
  • 1 liter full-fat milk
  • 150g ghee (clarified butter)
  • 200g Dinesh Flour Mills Desi Khand (Khandsari sugar)
  • 1/2 teaspoon cardamom powder
  • A handful of mixed nuts (almonds, pistachios, cashews) - chopped
  • A pinch of saffron strands (optional)

Instructions:

  1. Heat ghee in a heavy-bottomed pan or kadai.
  2. Add the grated carrots and sauté for 5-6 minutes on medium heat.
  3. Pour in the milk and bring to a gentle boil.
  4. Reduce heat and simmer, stirring occasionally, until the milk is absorbed and the carrots are cooked (approximately 40-45 minutes).
  5. Once the mixture thickens, add the Khand and mix well.
  6. Continue cooking for another 10-15 minutes until the halwa reaches a thick consistency.
  7. Add cardamom powder and saffron strands (if using).
  8. Garnish with chopped nuts before serving.
