Aloo Makhana Kaju Curry for Navratri

A vrat curry worth saving for another day. Potato, toasted makhana and a smooth cashew gravy turn into a Navratri curry that feels like a proper centrepiece. Dinesh Flour Mills Phool Makhana and Kaju bring two different textures to the bowl. Add the makhana at the end so it keeps a little bite. Prep: 15 minutes | Cook: 25 minutes | Yield: 3Additional time: Cashew soaking: 20 minutes Ingredients 1 1/2 cups (about 30 g) Dinesh Flour Mills Phool Makhana 1/4 cup (about 35 g) Dinesh Flour Mills Kaju, divided 2 medium potatoes (about 250 g), boiled, peeled and cubed 1 tbsp Dinesh Flour Mills A2 Gir Cow Bilona Ghee, divided 1/4 cup water for blending the cashews 1 cup hot water for the gravy, plus a little extra if needed 1/2 tsp Dinesh Flour Mills Sendha Namak, or to taste 1/2 tsp Dinesh Flour Mills Jeera, optional 1/4 tsp Dinesh Flour Mills Kali Mirch powder, optional How to make it Reserve 1 tbsp of the cashews for garnish. Soak the remaining cashews in hot water for 20 minutes. Drain and blend with 1/4 cup fresh water until smooth. Heat 1 tsp of the measured ghee in a pan. Toast the reserved cashews until pale golden and remove. In the same pan, roast the makhana on low heat for 5-7 minutes until crisp. Remove and keep aside. Heat the remaining ghee in the pan. Add optional jeera, followed by the cashew paste. Stir on low heat for 2-3 minutes without browning it. Gradually stir in 1 cup hot water. Add boiled potato, sendha namak and optional pepper. Simmer for 6-8 minutes, stirring gently; add a little more water if the gravy gets too thick. Add the roasted makhana and simmer for 2 minutes. Garnish with the toasted cashews and serve immediately so the makhana retains some texture. Kitchen tip: Blend the soaked cashews thoroughly for a smooth gravy. Keep the heat low when cooking the paste so it does not stick. Serving suggestion Serve with Rajgira Aloo Paratha or Samak Rice Pulao from this collection. Allergens: Cashew nuts and milk (ghee).
