Baked Black Wheat Mathri | बेक्ड काले गेहूं की मठरी

Baked Black Wheat Mathri is a crisp, savoury snack flavoured with ajwain and made with Black Wheat Atta and suji. It can be baked, air-fried or traditionally fried according to preference.

Ingredients

  • 1½ cups Dinesh Flour Mills Black Wheat Atta

  • ½ cup Dinesh Flour Mills Suji

  • ½ teaspoon ajwain

  • ¾ teaspoon salt

  • ¼ teaspoon black pepper powder

  • ⅓ cup ghee

  • Water as required

Method

  1. Combine Black Wheat Atta, suji, ajwain, salt and black pepper.

  2. Add ghee and rub it into the flour with your fingertips.

  3. Add water gradually and prepare a firm dough.

  4. Cover and rest the dough for 15 minutes.

  5. Preheat the oven to 180°C.

  6. Roll the dough slightly thicker than a roti.

  7. Cut it into small circles or diamond shapes.

  8. Prick each piece with a fork to prevent puffing.

  9. Arrange the mathris on a lined baking tray.

  10. Bake for 20 to 25 minutes, turning once, until crisp.

  11. Cool completely before storing in an airtight container.

Air-Fryer Option

Air-fry at 170°C for approximately 12 to 15 minutes. Turn the mathris halfway through cooking.

Traditional Frying Option

Fry the mathris on low to medium heat until evenly cooked and crisp.
