Makhana Kheer with Kaju and Badam
by Pradeep Gupta on Oct 13, 2026A festive spoonful, made the old-fashioned way.
Makhana kheer is all about a gentle simmer and the texture of softened fox nuts. This version uses Dinesh Flour Mills Phool Makhana, Kaju, Badam and Desi Khand. Crushing part of the roasted makhana helps thicken the milk while keeping some whole pieces for a familiar homemade finish.
Prep: 10 minutes | Cook: 30 minutes | Yield: 4
Additional time: None
Ingredients
- 2 cups (about 40 g) Dinesh Flour Mills Phool Makhana
- 750 ml full-fat milk
- 3 tbsp Dinesh Flour Mills Desi Khand, or to taste
- 1 tsp Dinesh Flour Mills A2 Gir Cow Bilona Ghee
- 1 tbsp chopped Dinesh Flour Mills Kaju
- 1 tbsp sliced Dinesh Flour Mills Badam
- 1/4 tsp crushed Dinesh Flour Mills Green Elaichi, optional
How to make it
- Heat ghee in a pan and roast the makhana on low heat for 5-7 minutes, stirring until crisp. Cool slightly.
- Crush half the makhana coarsely. Keep the rest whole or break into large pieces.
- Bring the milk to a gentle boil in a heavy saucepan. Add all the makhana and reduce the heat.
- Simmer for 15-20 minutes, stirring often and scraping the sides, until the makhana softens and the milk thickens slightly.
- Add the desi khand, cashews and most of the almonds. Simmer for 2-3 minutes, add optional elaichi and switch off. Garnish with the remaining almonds.
Kitchen tip: Kheer thickens as it cools. Stop cooking while it is slightly looser than your preferred serving consistency.
