Makhana Kheer with Kaju and Badam

A festive spoonful, made the old-fashioned way. Makhana kheer is all about a gentle simmer and the texture of softened fox nuts. Simmer for 15-20 minutes, stirring often and scraping the sides, until the makhana softens and the milk thickens slightly. Add the desi khand, cashews and most of the almonds. Simmer for 2-3 minutes, add optional elaichi and switch off. Garnish with the remaining almonds. Kitchen tip: Kheer thickens as it cools.
