South Indian Rava Kesari

Rava Kesari is a traditional South Indian dessert prepared with Suji, ghee, sugar, elaichi, kaju and badam. Its soft texture and warm aroma make it suitable for festive meals and family occasions.

Ingredients

1 cup Suji
-
¾ cup sugar
-
2½ cups water
-
⅓ cup ghee
-
¼ teaspoon green elaichi powder
-
10 kaju
-
8 badam, sliced
-
A few saffron strands, optional
Method
-
Heat one tablespoon of ghee in a heavy kadai.

Add kaju and sliced badam. Roast lightly and remove.

Add Suji to the kadai and roast over low heat for 5 minutes.

Heat water separately and add optional saffron.

Carefully pour the hot water into the roasted Suji while stirring.

Cook until the Suji absorbs the water.

Add sugar and mix well. The mixture will become slightly loose.

Add the remaining ghee gradually.

Cook until the Kesari becomes smooth and begins leaving the sides.

Add elaichi and roasted dry fruits.

Serve warm.
