South Indian Vegetable Suji Upma

 वेजिटेबल सूजी उपमा Vegetable Suji Upma is a simple South Indian breakfast made with roasted semolina, vegetables, curry leaves, mustard seeds and dals. Transfer it to a plate. Heat ghee or oil in a kadai. Add mustard seeds and let them crackle. Add Chana Dal and Urad Dal. Cook until lightly golden. Add curry leaves, green chilli and onion. Add carrot, peas and beans. Cook for 3 to 4 minutes. Add water and salt and bring it to a boil. Gradually add roasted Suji while stirring continuously. Cover and cook over low heat for 4 to 5 minutes. Add lemon juice and mix gently. Serve warm with coconut chutney. Instant Vegetable Suji Uttapam

 सूजी उत्तपम This instant uttapam uses Dinesh Flour Mills Suji, curd and finely chopped vegetables. It is an easy breakfast recipe that does not require fermented dosa batter. Preparation time: 20 minutesCooking time: 20 minutesServings: 3Yield: 6 uttapams Dinesh Flour Mills Products Used Dinesh Flour Mills Suji Dinesh Flour Mills Lahori Namak Dinesh Flour Mills Jeera Ingredients 1 cup Suji ½ cup curd Approximately ¾ cup water ½ teaspoon salt ¼ teaspoon baking soda or ½ teaspoon fruit salt 1 small onion, finely chopped 1 small tomato, finely chopped ¼ cup chopped capsicum 2 tablespoons chopped coriander 1 green chilli, optional Oil or ghee for cooking Method Mix Suji, curd, salt and water to make a thick but pourable batter. Rest the batter for 15 minutes. Add a little water if the batter becomes too thick. Mix in the baking soda or fruit salt immediately before cooking. Heat a tawa and grease it lightly. Pour a ladleful of batter and gently spread it into a thick circle. Sprinkle onion, tomato, capsicum, coriander and green chilli on top. Press the vegetables gently into the batter. Drizzle a little oil around the edges. Cover and cook on low heat. Turn and cook the second side. Serve with coconut chutney or tomato chutney. Preparation time: 20 minutesCooking time: 20 minutesServings: 3 to 4Yield: 8 to 10 dosas Dinesh Flour Mills Products Used Dinesh Flour Mills Ragi Atta Dinesh Flour Mills Rice Atta Dinesh Flour Mills Suji Dinesh Flour Mills Jeera Dinesh Flour Mills Lahori Namak Ingredients 1 cup Ragi Atta ¼ cup Rice Atta 2 tablespoons Suji ½ cup curd 1½ to 2 cups water ½ teaspoon jeera 1 small onion, finely chopped 1 green chilli, finely chopped 2 tablespoons chopped coriander Salt to taste Oil or ghee for cooking Method Combine Ragi Atta, Rice Atta and Suji in a mixing bowl. Add curd, salt, jeera and one cup of water. Mix until smooth and then add enough water to make a thin batter. Add onion, green chilli and coriander. Rest the batter for 15 minutes. Heat and lightly grease a tawa. Pour the batter from the outside towards the centre. Do not spread it with the ladle. Drizzle a little oil around the edges. Cook until the dosa becomes crisp.
