Browntop Millet Salad (serves 4) Ingredients: 1 cup Dinesh Flour Mills Brown Top Millet 2 cups water 1/4 cup olive oil Juice of 1 lemon Salt and pepper to taste 1 cup cherry tomatoes, halved 1 cucumber, diced 1/4 cup chopped fresh mint 1/4 cup chopped fresh parsley 1/2 cup crumbled feta cheese Instructions: Rinse the millet under cold water until the water runs clear. In a saucepan, bring water to a boil, add the millet, then reduce the heat to low, cover and let it simmer for about 15-20 minutes, or until the grains become tender and all the water is absorbed. Remove from heat and let it stand for 5 minutes, then fluff with a fork and allow it to cool. In a large bowl, whisk together the olive oil, lemon juice, salt, and pepper. Add the cooled millet, cherry tomatoes, cucumber, mint, parsley, and feta cheese. Toss well to combine all the ingredients. Serve immediately or refrigerate for an hour before serving to let the flavors meld together. Recipe for Millet Poha using Dinesh Flour Mills Millets: Ingredients: 2 cups of Dinesh Flour Mills Barnyard Millet. 1 onion, finely chopped 1 green chili, finely chopped 1/2 cup of peas 1/2 cup of chopped carrots A handful of peanuts 1 tsp of mustard seeds A pinch of asafoetida (Hing) 8-10 curry leaves 1 tsp turmeric powder Salt to taste 1 tablespoon oil Lemon juice to taste Fresh coriander leaves for garnishing Steps: Roast the millets in pan till light brown without oil . Now add some 4 cups water and boil for 7-8 mins. Now strain the water and keep aside. Heat oil in a pan and add mustard seeds. When the seeds start to splutter, add asafoetida, curry leaves, and green chilies. Sauté for a few seconds. Add the peanuts and fry them until they are crispy. Add the chopped onions and sauté until they turn translucent. Now add peas and carrots, and cook until they are soft. Add turmeric powder and salt, mix well. Here's a recipe for making poha using Dinesh flour mills Poha: Ingredients: 1 cup Dinesh flour mills Poha 1/4 cup finely chopped onion 1/4 cup finely chopped tomato 1/4 cup chopped potatoes (optional) 1/4 cup green peas (optional) 1-2 green chillies, chopped 1/2 tsp mustard seeds 1/2 tsp cumin seeds 1/2 tsp turmeric powder 1/2 tsp red chilli powder 1 tbsp oil Salt to taste Lemon juice and coriander leaves for garnish Instructions: Rinse the Dinesh flour mills Poha thoroughly in a colander under running water until it becomes soft. Drain the water completely and set aside. Heat oil in a pan or kadhai. Once the oil is hot, add mustard seeds and cumin seeds. Let them splutter. Add chopped onion and green chillies. Sauté for a minute or two until the onions turn translucent. Add chopped tomatoes and sauté until they turn soft and mushy. Add chopped potatoes and green peas (if using). Poha Cutlet: Mix soaked poha with boiled mashed potatoes, chopped onions, green chilies, coriander leaves, salt, red chili powder and cumin powder. Shape into cutlets and shallow fry. Poha Chivda: Roast poha in a dry pan until crispy. In another pan, heat oil and add peanuts, curry leaves, mustard seeds, cumin seeds and asafoetida. Add roasted poha, turmeric powder and salt. Mix well and store in an airtight container. Poha Dosa: Grind soaked poha with rice, urad dal and salt to make a batter. Ferment for 6-8 hours. Make dosas on a hot griddle and serve with chutney. Poha Vada: Mix soaked poha with soaked and ground chana dal, chopped onions, green chilies, coriander leaves, salt, cumin powder and red chili powder. Shape into vadas and deep fry. Poha Paratha: Mix soaked poha with wheat flour, salt, cumin powder, red chili powder, coriander leaves and water to make a dough. Roll out into parathas and cook on a hot griddle. Poha Ladoo: Roast poha in a dry pan until crispy. Grind into a fine powder. Mix with jaggery syrup, grated coconut and cardamom powder. Shape into ladoos and serve. Poha Kheer: Boil milk and add soaked poha, sugar and cardamom powder. Cook until the poha is soft and the kheer thickens. Garnish with nuts and serve. Poha Bhel: Mix roasted poha, chopped onions, tomatoes, cucumber, coriander leaves, sev, chaat masala, lemon juice and salt. Serve as a snack. Poha Idli: Grind soaked poha with urad dal, rice and salt to make a batter. Ferment for 6-8 hours. Steam in idli moulds and serve with chutney.

Ingredients: 1 cup Dinesh Flour Mills multigrain flour /millet flour 1/2 cup Dinesh Flour Mills flour  1/2 tsp salt 1/2 tsp carom seeds 2 tbsp oil Water, as needed 2 medium potatoes, boiled and mashed 1/2 cup peas 1/2 cup chopped onions 1/2 tsp cumin seeds 1/2 tsp coriander seeds 1/2 tsp turmeric powder Instructions: In a bowl, mix together Dinesh Flour Mills multigrain flour, Dinesh Flour Mills flour , salt, carom seeds, and oil. Slowly add water and knead the dough until it's smooth and pliable. Cover the dough and let it rest for 30 minutes. Meanwhile, in a pan, heat oil and add cumin and coriander seeds. Once the seeds start spluttering, add onions and sauté until they turn translucent. Add peas, mashed potatoes, turmeric powder, and salt to taste. Mix well and cook for a few minutes. Allow the mixture to cool down completely. Preheat the oven to 375°F (190°C). Divide the dough into small balls and roll them out into circles. Cut the circle into two halves. Take one half, wet the straight edge with water and make a cone shape. Stuff the cone with the potato and peas mixture, leaving some space at the top. Wet the top edges of the cone with water and seal it tightly. Repeat the process with the remaining dough and filling. Place the samosas on a baking tray and bake for 20-25 minutes, or until they turn golden brown. Serve hot with chutney or sauce of your choice

Mix well. Add the oil and mix again until the mixture resembles coarse crumbs. Gradually add water, a little at a time, and knead the dough until it is smooth and pliable. Cover the dough with a damp cloth and let it rest for 15-20 minutes. Heat oil in a deep frying pan on medium heat. Divide the dough into small balls. On a floured surface, roll out each ball into a thin, round disc, about 4-5 inches in diameter. Carefully drop each disc into the hot oil and fry until golden brown on both sides.
